Last week we did a Valentine's Day Pop Up Event at our local Boys and Girls Club. I was trying to figure out what to make. With the weather getting cold, I went to my old stand by, a Grilled Cheese Sandwich. Well, I thought that would be too boring and the girls most likely knew how to make that. I came up with a Healthy Grilled Pesto Pizza Sandwich!
You ask yourself, what is a Grilled Pesto Pizza Sandwich!?! You take all the ingredients of a grilled cheese, add what you would like on a pizza: pepperoni, green pepper, mushrooms, marinara sauce, pesto spread and cheese. Put this all on Italian or French bread and you have yourself a very yummy sandwich.
Recipe for Grilled Pesto Pizza Sandwich
Makes One Sandwich
2 slices French or Italian bread
1 teaspoon of marinara sauce
1 teaspoon of pesto sauce
1 slice of provolone cheese
1 slice of cheddar cheese
10 slices of turkey pepperoni
add mushroom or green peppers if you like
Butter for back of bread
1) take griddle pan and get hot.
2) spread a small amount of butter on back of each slice of bread, turn bread over and on one slice add 1 teaspoon of marinara sauce and to the other half of bread add 1 teaspoon of pesto sauce
3) cut cheese slices into a triangle and 1 triangle of each cheese on top of your sauces.
4) add your pepperoni and veggies (if using)
5) put your sandwich together and put in the hot pan butter side down. Grill for about 3 mins on each side or until cheese is melted and golden brown on the outside
Enjoy with a warm cup of Tomato Soup on a cold day.
Lil Chef’s Clubhouse is presenting a new series of Parent/Grandparent and Me Classes at Rancho Santa Susana Park - Lil Sprouts!
March is National Nutrition Month! A good rule of thumb in eating a balanced diet and striving for variety in the foods we eat! Over the course of these four weeks, that's just what we will do! The classes focus on how to prepare a variety of different fruits and vegetables to create tasty meals!
In each class we will start with a Healthy Hands Cooking activity and children will be able to associate the colors with each of the fruits and vegetables that help keep our bodies healthy.
Classes start March 4 (4 Monday’s 10:30-11:30) 3-5yrs Old

I will be working with Parents/Granparent along with their little ones on an adventure of Healthy Cooking. We will be making healthy snacks and have fun interactive activities that will incorporate a fun recipe. At Simi Parks and Rec. the sessions are March 4 to April 1 (4 Mondays 10:30-11:30) and April 2- April 30 (4 Tuesday 10:30-11:30 At Oak Park Community Center come on over on Wednesday's starting on March 6 - April 10th.
Also, this Winter for the older kids (6-9 yr olds) Does your budding chef want to do some fun cooking over Spring break, than hop over to Simi Parks and Recreation Center for Healthy Cooking Camp Fun March 25 -28. from 9:00-12:00. I will also have another fun Healthy Cooking Fun Class on April 8-April 29 (4 Mondays from 4:00-5:00) as well
Than on Tuesdays over at Oak Park your 6-9 year old can have a lot of fun starting March 5 - April 9 from 3:45-4:45.
